Breakfast For Champions, Part 2 - Easiest Vegan Avocado Toast Breakfast

So yesterday it was about egg baked in avocado. Today, the breakfast is equally nutritious but no animal bi-products are involved. Clean, easy and simple. Just as breakfasts should be. Let's get started!

Ingredients (for 2):


  • 1 ripe avocado, cut in half, de-pitted, and peeled
  • 1/2 lemon
  • 2 slices of bread
  • 1 tomato
  • salt and pepper
  • sesame seeds for sprinkling

How-To:


  1. Toast the bread.
  2. In a bowl mash the avocado to a paste.
  3. Season with the salt, pepper and lemon juice.
  4. Cut the tomato to slices.
  5. Spread a thick, even layer of the avocado mixture on the toasted bread.
  6. Arrange the tomato slices on top of the avocado spread.
  7. Sprinkle with sesame seed and if wanted. with additional salt and pepper.
  8. Enjoy!
