Breakfast For Champions, Part 1 - Avocado+Egg Bake with Turkish-Inspired Side


I love breakfasts, they are my most favourite meal of the day. I love how surprising and interesting they can be, and I adore the fact that you can have almost anything for breakfast. Cakes? Yeas, sir! Eggs? Yes, in all shapes and tastes! Sandwiches? Yes, if you wish! Porridge, muesli or cornflakes? Yes, of course! Toast? Yes, it's coming your way! Anything and everything can be eaten for breakfast, just unleash your imagination! 
Now, a fast and healthy breakfast is a whole other thing. It's even a whole new level of cooking. In the busy life we all have eating healthy is not a top priority for some/most of the people. Yes, to eat healthy takes a bit more effort in terms of coming up with ways to healthy-up favourite recipes, but it's not impossible at all. And the satisfying and guilt-free feeling after eating something that's good for you is irreplaceable! And I promise,  this breakfast will keep you going for hours. 

Ingredients (for 2):


  • 1 ripe avocado, cut in half and the pit removed
  • 2 small eggs
  • 2 slices of bread (mine is homemade rye and wheat bread)
  • 1 tomato
  • few slices of cucumber
  • few olives
  • few pieces of white cheese
  • salt, pepper and hot chili

How-To:



  1. Preheat the oven to 180C.
  2. Using a sharp knife, cut the the bottoms of the avocado so it can stay still and place them in a baking pan.
  3. Crack an egg in each half and season to your taste. I, for example, like mine extra spicy.
  4. Place the pan in the oven and bake for few minutes. How much depends on how hard you like your eggs. Check every few minutes until they reach your stage of preference.
  5. While the avocados are in the oven, toast two slices of bread.
  6. In a plate arrange the veggies, the cheese and the bread.
  7. When the avocado is ready add it in the plate.
  8. Wait a minute or two to cool down and enjoy!
