Breakfast For Champions, Part 2 - Easiest Vegan Avocado Toast Breakfast
So yesterday it was about egg baked in avocado. Today, the breakfast is equally nutritious but no animal bi-products are involved. Clean, easy and simple. Just as breakfasts should be. Let's get started!
Ingredients (for 2):
- 1 ripe avocado, cut in half, de-pitted, and peeled
- 1/2 lemon
- 2 slices of bread
- 1 tomato
- salt and pepper
- sesame seeds for sprinkling
How-To:
- Toast the bread.
- In a bowl mash the avocado to a paste.
- Season with the salt, pepper and lemon juice.
- Cut the tomato to slices.
- Spread a thick, even layer of the avocado mixture on the toasted bread.
- Arrange the tomato slices on top of the avocado spread.
- Sprinkle with sesame seed and if wanted. with additional salt and pepper.
- Enjoy!
